I have always loved balsamic vinegar, but I never really knew about its rich history or origins. The fact is that only real balsamic vinegar is made in Italy in Reggio Emilia and Modena. Serious Eats (2014) explains that traditional balsamic vinegar is overseen from harvest to the end by a special certification agency. The grapes are whole pressed, (juice, skins, seeds, and stem), cooked over fire, fermented for three weeks, and then aged for 12 years in barrels. Seasons Olive Oil & Vinegar Taproom's unique tasting barrels are a great way to sample and enjoy before you purchase. Both sides of the shop are lined with the stainless-steel barrels and tasting cups. I am not a lover of olive oil, but the shopkeeper showed gave me a sample of a mild extra virgin olive oil from Spain and I was instantly sold. I also purchased the traditional, black cherry, and Santorini oregano vinegars. If you love Balsamic Vinegar, be sure to stop in!
